is this the right keyword to put into an asset builder's (standard page builder) custom layout, so that we can add contents on the asset (standard page) that we are building…

You cannot use %__custom_contents% on an asset builder for a standard page, because the bodycopies don't exist yet. The News Item asset is one of the only assets in Matrix where the content can be edited during the create process. You need to create a standard page first and then use Simple Edit to add content to it.

It is the right keyword for a simple edit layout.
