I've been a tad busy since my sucessful install of 3.6.0 and the documentation seems to be taking a while to come forward (at the moment only 2 revised documents for this version exist).
Is there any test/dummy data available that can be loaded up so I can have a look around the system and start to try and piece together how what happens where?
Many over systems give option/possibility of loading up test data on install.
Sorry, but no, we dont have any test data that users can load in.
The documentation is on its way for the new version. You should still be able to use the 3.4 documentation to get started though. The basics dont change that much.

Any one else noticed that the documentation links at http://matrix.squiz.net/download/documentation/3.6_documents#3.6%20Manuals seem to have some problems, one loops back to page, another the wrong document again description, one earlier today saying invalid document when PDF reader got to it?

Our documentation writer had some problems with the PDFs earlier today. These should be fixed now.
