Are there any problems with including extended characters in the Asset Name? For example using an em dash to separate two words, ie,
Test–asset = Test–asset

The only part that might be encoded in a way you might not want it is the URL to that asset.
For example: Using & in a asset name will give and to the URL, which might be fine if you are building a english website.

Good point. I'd suggest changing the web path for the asset on the web paths screen. Matrix will strip out some invalid characters, but you will almost certainly not get what you are after without manually changing it.
