Is there a way of switching off the Auto Update feature on the Asset Map? Specifically When performing a Hipo Job. If you are running a particularly large Hipo (cache clearing/Trash Purge etc) an Auto Update is called every second or so. If several people are doing this at once it significally increases server load.

There is no way to turn that off.
If you have the Squiz Server, you dont have that update occuring after each update. If you dont, you can try increasing the thresholds for HIPO jobs so they perform more than one action at a time. For example, set HIPO jobs to lock 10 assets at a time so you have less refreshes.
You can change these settings by selecting the System Configuration icon from the top right and then HIPO Configuration from the drop-down.
