When I set the Time Zone in my Squiz installation, it gives me warning.
How do I set it to GMT?

Please provide details of the message that is shown.
In order to set the timezone to GMT, please enter “GMT” (without quotes) into the “System Timezone” item in System Configuration.

Cool it works but it is showing the wrong Daylight saving time e.g real time - 11am, squiz time - 10am. I guess I can work around this doing GMT+1.
Is there any other option I have to play around to get Matrix to set Winter/Summer time automatically?

Thats because it is GMT!
As Peter says you dont actually want GMT necessarily, you want to put your location in to get the local timezone rules.

Our system timezone is set correctly to Australia/Sydney but I've noticed that it is an hour behind since daylight savings began (eg. should be 2pm not 1pm). Have I missed something really obvious? :huh:

This is not an issue with Matrix per se, since Matrix itself does not do any specific timezone handling (apart from getting and setting it). However, if the version of PHP running on your system is more than a couple of years old, it may still be using the older daylight saving rules, in which NSW moved to daylight savings at the end of October rather than the start.
PHP maintains its own built-in copy of a timezone database, which is updated with each version, and is separate from any timezone data your underlying OS has. Since the changes to daylight savings time only took effect from 2008, the changes were only reflected in the timezone database PHP uses from about August 2007 (as would anything getting their timezone data from the same source).
Long story short, it appears that this DST change would have been first reflected in version 5.2.5 of PHP.
To fix the issue, those running servers with 5.2.4 or earlier versions of PHP would either have the option of:
- upgrading to PHP 5.2.5 or later, or
[*]installing a version of the [url=http://pecl.php.net/package/timezonedb]timezonedb PECL package[/url] - this replaces the in-built timezone database with a later version.
