Can anyone enlighten me on how to do this?
Let's say I wanted to group assets first by the folder they're in, and then by a piece of metadata.
Matrix allows me to create the two groups, but I can't figure out how to display them. I only ever get the top level group. :unsure:
Any helpful hints?

In the grouping screen you would add a group level that groups on parent asset, then add a group level after level 1 that groups on asset metadata. To be honest I have never managed to get this to work either and have often fallen back on combining asset listings and paint layouts to do this. A paint layout for folder that lists the assets grouped on metadata that is applied to the folders, then list the folders and use the asset contents keyword (paint layout will come with). Alternatively you could use the %asset_contents_paint_% and define a paint layout specifically to use for the listing and not have to apply the paint layout to the folders directly.

Yes, I guess I could do this, but it really seems like it should be easier to go %group_name_level1% or %group_listing_level2% or something like that…

I was happy that you actually posted this as I always wondered why I could never get it going by following what would seem to be very logical set up, but as always when there is a work around you never seem to be tempted to pursue a resolution to something that should actually really work.
Let's see if anyone can come in with a setup that actually works and make us feel like noobs again, or because there is a work around will nobody actually bother to see if it actually really works ;)

I got it to work ok. Not sure if I have any real hints, it's a bit of a pain to get working because it either works or breaks totally, no middle ground. It's also pretty slow, and the sorting is kinda funny.

That far I got - but then what do you put in the group formats to make it appear on the listing page? Didn't seem to matter what I put in there, I only got the top level group.

Hum, do you have "Custom Grouping" selected in the list format box of your asset listing (on the details page)? From the way you're describing it that'd be my guess as to what's wrong.

Yes, that selection is in place - as I said in the original post, the first level grouping works as expected - it's the second level grouping that's not showing up.

What version are you working on? and what is in your group formats?
3.28.1, and not a whole lot - Basic html or JSON usually. I just set up a quick test to demonstrate:
two folders, each with four redirect pages below. I made a metadata scheme with two attributes - "att1" & "att2", and applied it to the folder. I then gave each redirect page different metdata values so I could group them - att1 was either "group1" or "group2" att2 "subgroup1" or "subgroup2". Made an asset listing, pointed it at the node, then added my group formats:
with the following bit of html:
group level 1 format:
%group_name%
%group_listing%
group level 2 format:
%group_name%
%group_listing%
group level 3 format:
%group_name%
- %group_listing%
type format:
