I have a test site with two folders underneath it. One called Home and the other called Press Releases. When the user clicks Home how do i get it to display the index page. I know you can set a default page for the site but can't see how you do something similar for a folder.

Folder dont work like that. They are only for organising data. You need to put your pages directly under the site and link in the home page as the home page for your site.
You can have multiple sites with similiar URLs. For example, one site could have a URL of www.example.com and the other could have www.example.com/press
