Namespaces and optional fields

Is is possible to use namespaces and add a namespace declaration in the "build RSS" section?
Also, is there any information/is it possible to add extra fields to the rss.

You will have to use a normal Asset Listing Page to output an rss feed with custom fields, I suspect.

I refer to adding namespaces to the identifiers e. g. <itunes:category> etc etc.

Yes, you would need to build the XML manually using an Asset Listing and a blank design. The current RSS Feed asset doesn't allow for this.
