Just a quick question…
Is it possible to create a new site as a 'child' of an existing site asset? The subsite would have a separate design, menu structure, etc.
for example-
Parent site: www.xyz.com
New site: www.xyz.com/newsite

I doubt that would work. But, you really don’t need to do this in the first place. What you need to do is use design customizations for different parts of your site.
Using customizations, you could use a different menu and stylesheet for a part of your site. Take a look at the design manual for more info on customizations.
It's possible to create site assets underneath other site assets. These site assets do not inherit all the configurations of it's parent so you will still need to apply urls, index pages etc. You can use Nic's suggestion of the design customisation you can achieve a different look and feel. The menu's generated in any design under a site asset will always start at the most direct parent site asset (which is what you are after).

You can do this with the root URLs of the site assets anyway; they don't have to physically fit under each other in the asset tree.
