Trying to determine if the Easy Edit Suite is included in Matrix demo download VM package? If not, can it be added on my local VM Matrix install?

No it's not already installed. There's no problem with you installing it on your local vm. The install instructions (http://manuals.matrix.squizsuite.net/ees/chapters/installation) should guide you through it, but of course if you have any questions let us know.
