For LDAP users, how do you use for example: %asset_attribute_first_name% %asset_attribute_last_name% , in a workflow email.
The keyword %workflow_user% does not output the persons name in our case.

I would have thought %asset_attribute_first_name% would just work, as it does with normal users. Which worfklow email specifically are you trying to edit? And can you confirm you are trying to print the name of the user who started the workflow?
We include the name in all workflow emails, something like .... Gavin Boyd has applied for approval on Page Name. An approver is now required...
We are trying to print the name of the user who started the workflow... who is an LDAP user type.
What version of Matrix are you on? We'll see if we can replicate in 5.2 in the meantime.

Tried using %asset_attribute_first_name%, this just outputed within the email:
Requester: %asset_attribute_first_name%
Approval request for page "Test workflow email on AD".
An Approver is now required to approve or reject the changes made to "Test workflow email on AD" so the workflow process can continue.
I was using %workflow_user% in my test and it was working.
Is there a reason you cannot use this?

We also struggled with this but got it working in the end with %workflow_user%
The trick is you have to make sure Common Name is mapped in the Attribute Setup screen of the LDAP Bridge.
