Is there any easy way to retrieve details on which remaps within Squiz are being actively used or have been used within a particular timeframe?

Not within Matrix unfortunately, if you are using a proxy cache in front of Matrix as well those remap hits wouldn’t even reach Matrix either, so it’d be best to get that information from your proxy cache analytics if possible.
