Was wondering if anyone knows if using a dynamic templating library - like Handlebars.js - is possible in a REST JS asset?

Yes it is - not sure about Aus/NZ, but the Squiz UK/Poland developers seem to like using Handebars in their projects so I’d imagine it’s fairly well supported if you run into any issues.
