Does MySouce Matrix have built-in functionality to enable users to display pages without images i.e. in a text only form ?

Yes. If you create a new design, use the following design area for your bodycopy:

    
      


This will strip all <img> tags from the bodycopies. Make sure you have HTML Tidy running successfully, as it'll only work with XHTML compliant <img> tags at the moment.
