Hi can anyone point me in the direction of the path to download and install version 5.1 or at least the last version that doesn't require a VM?

All download versions of Matrix on the manuals require a VM, the latest one is of 5.3 and can be downloaded from here: https://manuals.matrix.squizsuite.net/test-squiz-matrix

Just to add that if what you want is to take the Matrix instance out of the downloaded VM and host it somewhere else, you can use the Matrix backup script.
